Chicken or Beef Enchiladas

I have been making enchiladas recently because my husband tried some my dad made and now has become obsessed. I have done beef and chicken so I will tell you how to make either of them. This is a super easy and really cheap meal to make.

Ingredients:

Tortillas (around 10)

1 lb ground beef

2 chicken breasts

cheese

2 can of green chilis

2 cans of red enchilada sauce (yeah I just buy it premade…GASP!..its easy and tasty so I don’t feel bad about my decision)

taco seasoning (either prepackaged or from scratch and if you want a recipe for that refer back to my taco seasoning post)

(for the chicken)

1 can of chicken broth

1 tbsp lemon juice

½ tbsp. vinegar

1 tsp cumin

2 cloves of garlic

½ tsp garlic powder

½ tsp onion powder

1 tbsp Badia complete seasoning (if you have it)

salt to taste

img_4597You can either cook your chicken in a crockpot or low and slow on the stove, if you don’t have a whole lot of time (like 6 hours) then the stove is your choice! Cut your chicken up in about four chunks and add to either your crockpot or pot and add your liquid, you want your chicken to be covered in liquid so if it’s still sticking out a lot add enough water to just cover it. Next add your cumin, garlic cloves (I use my garlic press) garlic powder, onion powder, Badia, and green chilis. Let it simmer until the chicken is tender and can be pulled apart with forks. Be sure to taste it because you may want to add a few things.  you want most of your liquid cooked out so add to a skillet with some of the liquid if cooking in the crockpot and cook until its mostly gone.

img_4598To prepare your beef just brown in a skillet with your taco seasoning and chilis, if you beef is really greasy take a paper towel and pull out a little but you want some grease in it for flavor. Also be sure to try your beef because you may want to add some seasoning to it as well.

Preheat your oven to 375

Once your meats are done cooking get out some oven-safe dishes, I use two dishes and cook about 10 enchiladas. I grease my dishes very lightly just so the sides don’t stick. Put some sauce on the bottom of your dish, just enough to cover the bottom. Add a few spoonfuls of mixture to the center of your tortillas with some cheese and roll them up, place in your pan seam side down. Put them pretty close together then pour on some more sauce and sprinkle cheese on the top. you are going to notice on one of my pictures I cut the sides off of my tortilla…I got some that were too big so I trimmed them up!

Cook in the oven for 20 minutes, you can serve with sour cream or just as is.
