I totally stole this idea from my sister in law…thanks, Katie!!
What makes this meal great is you can use basically whatever ingredients you have around if you have potatoes. I used several ingredients because I had some leftover grilled peppers and some black beans in the refrigerator. This would be delicious with just taco meat, potatoes and cheese if you don’t want to add a bunch of other stuff. I am going to give you the list of ingredients I used for ideas but like I said you do not need to use all of this.
Ingredients:
Potatoes (around 4 or 5)
Hamburger (1 lb. if you are using other ingredients, if you are just using taco meat then I would use two pounds)
Canned green chilis
Bell peppers
Onion
Black beans
Shredded chicken
Cheese
Small amount of olive oil (or vegetable oil works fine too)
Get an oven-safe pan and rub a little oil in it so the potatoes don’t stick. Prepare your meat with taco seasoning and if you are using peppers or anything else cook them as well. Skin your potatoes and slice them thin, to make that easier use a mandolin slicer, just don’t slice your finger!! Start with a layer of potatoes on the bottom then start layering!! If you are just using hamburger and cheese I would say do a layer of meat and cheese then add another layer of potatoes.
I made some shredded chicken in my pressure cooker, you can just put a little liquid and taco seasoning or I used garlic, lemon just, vinegar, and badia complete seasoning (this is a Cuban way to prepare meat, super tasty).
Layer up as high as you want and cook in the oven at 375 until the potatoes are tender, this will take around an hour. I covered mine for the first 45 minutes of cooking then took off the lid to crisp up the first layer of potatoes.
This dish was great for me because I had several taco left overs, this is a good way to use them so they won’t go to waste!
