Spicy Chicken Sandwiches

I don’t know about you but I love spicy chicken sandwiches. So instead of running out and buying one every time I wanted one I figured I should make my own. You more than likely have the majority of the ingredients you need already so this makes for an easy crowd pleaser.

Ingredients:

  • 2-4 chicken breasts
  • ¼ cup cornmeal
  • 1 cup flour
  • 1 tsp. red pepper chili flakes
  • ¼ tsp. celery salt
  • 1 tsp salt
  • ½ tbsp. garlic powder
  • ½ tbsp. onion powder
  • coarse black pepper
  • 2 tbsp hot sauce (your choice)
  • 1 egg
  • ½ cup of water
  • bread of your choice
  • tomato
  • mayonnaise
  • lettuce
  • cooking oil

take your chicken breast and tenderize with a tenderizing mallet and set aside. In one bowl put your egg water and hot sauce and mix well. in another bowl put the flour cornmeal and all of the spices. First coat in the flour mixture then put in the egg mix, once the chicken is coated put back in the flour mix coat really well and set aside. Now heat your oil, to check if it’s hot you can sprinkle some of the flour mixture into the oil, if it starts to bubble right away then it is hot enough. Coat your chicken again in the flour mix and then add into the heated oil, cook until golden.  try to only flip one time, I use tongs and carefully turn it if you turn it more then that you are at risk of your breading breaking and falling off.

I like to use Italian bread from our grocery stores bakery (it isn’t seasoned). I cut it thick and put butter on it to toast it in a skillet. Next, put mayo on your bread with lettuce and thick-cut tomato and of course your chicken.
