This is a great one-pot meal, low mess and quick to make, so if you don’t know what to make one night, good news! This is one you will want to remember!
The ingredients in this recipe aren’t anything weird so there is a good chance you may have some of it in your pantry already.
Ingredients:
1 lb ground beef
1 can of diced petite tomatoes
1 tbsp tomato paste
1 can of green chilis
½ can of black beans
¼ cup diced onion
2 cloves garlic
1 package of taco seasoning (or you can make your own)
8 oz spaghetti
3 cups hot water
cheese (your favorite kind with tacos)
Take your pot and cook your ground beef, while it is cooking add in your diced onion and mince up your garlic and add it also. If you beef has a lot of grease you can take a paper towel and just stir it around in the pot a little and it will soak up some of that grease without having to dump the whole thing out to drain it. Once your beef is cooked add your diced tomatoes, tomato paste, green chilis, black beans (I just spoon in the black beans, if you get some of the liquid that is fine just don’t pour it all in) taco seasoning and then stir together.
There isn’t much left to do now! Next add your three cups of hot water, the only reason I use hot is that it all starts to boil faster, you want the liquid to be bowling pretty quickly because you are going to be adding the pasta now too. Next, add your pasta. I break the pasta in half just so it is easier to stir and fits in the pot a little better. You are probably asking yourself, “how do I know how much 8oz of spaghetti is?” I have found it is about a hand full, and if you add a little too much its no biggie, you can always add a touch more water later.
Now turn down the heat and simmer with a lid on until the liquid is absorbed and your pasta is tender, this will take 15-20 minutes. At this point you can add a couple of handfuls of cheese, we use sharp cheddar cheese for this recipe but you can use mozzarella or packaged taco cheese, whatever tickles your fancy!
There you go that’s it! This will be a family favorite for sure, it’s easy and doesn’t make a big mess so everyone wins.
